Claudia Burns is the instructor for this excellent course in baking Italian bread, English muffins, and crumpets. The third in a series of bread baking videos, this program offers crisp instruction, with good close-up camera work, and numerable helpful suggestions for getting past that tricky stage of the bread rising properly. There's even a bit of humor, as Burns lauds the therapeutic effect of kneading bread dough: "The more you abuse your dough, the better your bread will be--so don't hesitate to give it a few punches." And she wails on it. Except for the rising and baking sections, all of the instruction is carried out in real time. This is a good how-to, and it is highly recommended.
