The man who put wild boar back on the menu (Chef Eric's Easy Guide to Cooking Game Meats & Fish, reviewed in our September-October 1993 issue) returns with more exotic cuisine that you won't find at your local Denny's. We're talking carnivore's delight here: Pork Ribs with Hawaiian BBQ sauce, Shari Lewis' favorite (Lamb Chops with Yogurt sauce), the aforementioned Buffalo Burgers, Braised Sea Bass, and the old standby New York Steak. In addition, Chef Eric, who is the Executive Chef at the Burbank Hilton, shows viewers how to make a Japanese Cucumber Salad (spritzed with Seaweed Liqueur), the always popular Peruvian Potato Salad, and for dessert, Barbecued Pineapple. Good instruction and camerawork, coupled with onscreen recipe cards make Chef Eric's Easy Guide to Barbecuing a good choice for BBQ enthusiasts.Home Run Meals: Fast Strategies for People on the Go is a low-budget production which mixes common sense and some good suggestions to make dinner time a little less stressful for the home cook. Written and presented by Elisa Ross, the tape covers meal planning for efficiency and savings, shopping techniques, the advantages of warehouse clubs, maximizing kitchen organization, "handy gadgets" (crockpots, blenders, etc.), and nutrition. The segments are broken up by brief cooking sections, in which a simple meal is demonstrated. There are some good tips here, but much of the information is obvious, and sometimes even extraneous ("store cleaning materials under the kitchen sink.") And most of the program is a talking-head presentation by Ross which, while well done, doesn't really utilize the video medium.Chef Eric's Easy Guide to Barbecuing is recommended.
