L.A. chef Robert van Houten minces ingredients, not words, in this practical, clear-cut entry from the Eazy Cookin' series, focusing here on authentic (and jalapeno-friendly) Mexican cuisine. Providing simple, concise instructions for a straightforward menu that includes: beans (a staple that, we're told, tastes better the slower you cook ‘em) and rice (deriving its ruddy color from bell pepper and tomato juice), beef fajitas, ceviche (which includes fresh shrimp, halibut, and sea scallops), a two-sauce/three-cheese recipe for chicken enchiladas, and a trio of salsas: pico de gallo, tomatillo salsa, and guacamole. Although van Houten is not the most dynamic of presenters, his handiwork speaks for itself: the knowledgeable epicure does a lot of “dirty work” preparation (as opposed to demonstrating with pre-sliced, pre-prepared ingredients), offers pertinent explanations (with the reasons behind certain cooking techniques) and safety tips, and performs tasks precisely and effortlessly (you should see this guy shear an avocado!).
