This fast-paced, informative program from the In the Kitchen series may be aimed at beginning or younger chefs, but any cook will benefit from its thorough explanation of kitchen-related math. Four main topics are covered: measuring liquid and dry ingredients, heat measurement, multiplication and division for recipes, and U.S./metric equivalents. The editing and camerawork (including lots of close-ups) are terrific, while the clear and plentiful onscreen graphics are excellent, with helpful banners highlighting definitions and tips. But the thorough, hands-on approach to the content is what really makes this production stand out, with kitchen tools, recipes, and techniques clearly explained and demonstrated along the way.
