Jim Ruch's introduction to single-pan cooking is an unfortunate marriage of solid graphics with fine demonstrations, but less-than-optimum DVD navigation. The program consists of good close-ups of such essentials as defatting a chicken breast, rolling and slicing a chiffonade of basil, and removing the pulp and juice of a lemon and an orange, while patient voiceover instruction guides the viewer through creating chicken, lamb, and shrimp dishes using a single pan. Unfortunately, balky DVD mechanics stymie quick movement from demonstrations to checking the glossary and back. Enclosed is a 12-page illustrated booklet containing six recipes for dinner entrees with suggestions for side dishes and salads. Recommended, overall. Aud: P. (M.E. Snodgrass)
