When I watched Papa Joe's No Fuss Bread Video, I grew concerned. Although I had never considered it before watching this tape, I have decided that I want fuss in my bread video. Because, to be perfectly frank, watching dough rise in real time could use a subplot. Using one set, one camera angle and darned near one take, "Papa" Joe Tippman gives us a straightforward summary of how to prepare homemade bread for baking in about 12 minutes. Speaking naturally, "Papa" takes us through each step in a competent and extremely straightforward manner. One of the comic and dramatic high points of this no-frills video is when Papa Joe steps back to check on a pan that has been heating for several minutes only to discover that he has, in fact, turned on the wrong burner. It is to the filmmaker's infinite credit that even this does not elicit a cut in the program, and left me with the distinct impression that perhaps the cameraman had succumbed to asphyxiation, or at the very least, left the building. An optional purchase. A better choice here would be Perfect Bread: How to Conquer Bread Baking (VL-12/91). Aud: P. (R. Ray)
