Incorporating suggestions made by Julia Child, the producers of Perfect Bread (originally reviewed in our October 1990 issue) have created a revised version. Attractively packaged, this new effort is a bit shorter than the last, and offers a sharper video image and crisper audio. Betsy Oppenneer, known as the "Pied Piper" of breadbakers, is the knowledgeable instructress for this guide to breadbaking which covers making bread by hand, as well as using a food processor and a heavy-duty mixer. Time-coded for easy reference, the lion's share of the program is devoted to breadmaking by hand, which offers viewers the joys of kneading (dubbed "breadaerobics" by Betsy's students), and a handful of shaping techniques. Excellent close-ups and confidence-building narration make this revised version of Perfect Bread a perfect choice for public libraries. A 35-page recipe booklet is enclosed with the tape.
