Let's get this straight. Sushi is not raw fish wrapped up in seaweed. Sushi is cold vinegary rice and raw fish wrapped up in seaweed. Any questions? Actually, "sushi" refers to the sticky rice, the raw fish is called "sashimi," and together they are fast becoming as American as Zen Buddhism. In this program, Master Sushi Chef Shig Chiba whips up sticky rice, slices and dices the most beautiful sashimi-sliced fish dishes, and shows viewers how to shape and roll the rice using the familiar bamboo roller as well as the hand roll technique (which looks like you're making a fish ice cream cone. Yum!). Standing on the sideline as co-host is sensational looking Rebecca Ferratti (Ace Ventura, Three Amigos), who doesn't actually do anything but make small talk with Chiba as he walks viewers through his sushi repertoire. Though the audio sounds somewhat muddy in places throughout the video, the program features good overhead camera angles, dish indexing with onscreen clocking, and fine instruction from Chiba. There's even a bonus lesson in cleaning out the refrigerator and using leftovers to create kid-friendly sushi dishes for even the most finicky eater. Hot dog sushi anyone? Recommended. Aud: P. (N.
