When it comes to French cuisine, beef burgundy with escargot in a rich cream sauce is not what we'd call a "low-fat, low-cal" choice. Marietta Pagani, a home economist and educator, offers viewers a brief introduction to counting fat grams and calories (which is too abbreviated and needlessly confusing), takes viewers on a tour of a health-conscious pantry, and then serves up a healthy meal. Pagani makes a seafood medley dish, a fruity couscous offering, a saucy (low-fat) spinach and snow pea combo, and an apple compote. The recipes (some, not all) are shown at the end of the program rather than during, which means that would-be cooks have to watch the entire program before cooking (especially since Pagani can be fairly vague during the actual instruction). Although larger culinary collections might want to consider, libraries would be better served by something like Jacques Pepin's Cooking Techniques (VL-7/96). An optional purchase.
