This two-disc, 13-episode set from the cutting-edge PBS-aired culinary series stars personable Spanish chef José Andrés, who bounces back and forth between his native land and his Washington D.C. kitchen to provide viewers with a look at cuisine and culture in Spain's 17 regions. In the episode “Asturias: How They Cook Back Home,” Andrés takes viewers to the Congas de Onis market, fries up a simple monkfish recipe, and dons a wetsuit to look for fresh mussels and barnacles. In “Andalucia: Tuna and Tapas,” viewers learn about cooking sherry and bluefin fishing, as well as how to make a tasty Ensaladilla Rusa (with potato, tuna, egg, homemade mayo, and trout roe), while “Madrid: A Cultural and Culinary Capital” includes visits to a splendid palace and a bustling market (for a fast food squid sandwich). My favorite episode, “Catalunya: Food Arts,” features two treats: a trip to the home of Salvador Dali and a mind-boggling 30-course meal hosted by Andres' friend and world-renowned chef Ferran Adria at three-star Michelin-rated restaurant El Bulli. Throughout this engaging series, terms are listed onscreen (bonito = tuna, etc.), while clever camera angles are employed to capture the culinary process (including one that views dishes from the bottom up when ingredients are being added or stirred). Andrés—who winks at the camera and maintains an amiable patter (“a drop or two…well, three or four, but you know what I mean”)—is the perfect host, introducing viewers to a Spanish gastronomic cornucopia. Highly recommended. Aud: P. (J. Williams-Wood)
