Chef, instructor, TV celebrity, and cookbook author Patrick Mould serves up some mighty fine culinary delights in this informative and mouthwatering exercise in authentic Cajun and Creole cooking, featuring corn and crab bisque, jambalaya, shrimp remoulade, Creole red beans and rice, white chocolate bread pudding, and more. While walking viewers through each dish, Mould offers encouragement ("don't be bashful with that sauce!"), suggests substitutions ("if you can't find it in your neck of the woods…"), and discusses "cheating" (using a store-bought roux, for instance), while also elaborating on the differences between Creole and Cajun cookery. Although the historical facts trotted out about his hometown of St. Martinsville seem irrelevant, the program's delectable culinary content and the relaxed style of the chef override the video's low-budget feel.
