Jean Rosenbaum, M.D., Director of the American Aerobics Association, is the instructor for this pair of healthy cooking videos. Fitness Muffins, as the title implies, shows viewers how to make high fiber bran muffins with no fat, no cholesterol, no salt, and no refined sugar (the recipe uses molasses). Beginning with a list of the wet and dry ingredients, Rosenbaum cheerfully guides viewers through the mixing of the ingredients, and the baking of the muffins. Noodle Making: Cheap and Easy is a guide to making inexpensive pasta noodles. Pointing out that a bowl of fettuccine in a restaurant might run in the neighborhood of 10 dollars, Rosenbaum suggests that a bowl of homemade noodles is closer in cost to about 10 cents. Dismissing the need for a pasta machine, Rosenbaum demonstrates a simple, effective way to create long, fairly thin noodles, using only a rolling pin, a sharp knife, and a little ingenuity.
