Cook's Magazine founder and host Christopher Kimball and a gang of chefs opt for dessert first in the episode “Forgotten Cakes,” examples of which include Chocolate Blackout (a staple of New York's once-famed Ebinger's Bakery) and Strawberry Poke (which features Jell-o). Some episodes center around meat (“Steakhouse Favorites,” “Barbecued Chicken,” “Regional Chops,” and “California Grilling”), while others are based on locations (“Southern Regional Recipes,” “Midwestern Favorites”), but overall the recipes revolve around Test Kitchen-approved examples of classic American fare. “All-American Picnic,” for example, showcases an extra crunchy fried chicken made using a buttermilk brine, along with a Yukon Gold potato salad, while “Diner Favorites” serves up fluffy omelets and home fries. All of the step-by-step recipes are accompanied by tasting segments (featuring a panel audience), tips and techniques (such as using a tapered rolling pin for better pie dough), and equipment reviews (from saucepans to dish soap).
