It's a mellower Chef Eric behind the knife in the latest installment of the eclectic cooking series from the Executive Chef of the Beverly Hilton Hotel (others include Chef Eric's Easy Guide to Cooking Game Meats & Fish [VL-9/93] and Chef Eric's Easy Guide to Barbecuing [VL-5/94]). But, the originality is still there. Viewers will learn how to make eggplant ratatouille, an avocado roll (vegetarian sushi), tahini dip, rhubarb strudel, a yummy miso soup, vichy carrots, salad with roast garlic dressing, braised fennel with celery root, and vegetable tempura (this last uses peanut oil in the tempura, which is a little too risqué for our tastes). If you want cute stories, watch Wok With Yan; if you want to see someone nipping at the sherry, watch Galloping Gourmet reruns; if you want someone who would rather mince onions than words, watch Chef Eric.
