Next time you're in the fish market, bend down and look your prospective purchase right in the eye: if that fish eye is clear and bulging (not sunken), chances are you're looking at supper. Guidelines on purchasing fresh fish are presented by Boston fish marketer Mike Foley, and Certified Master Chef Milos Cihelka demonstrates how to prepare a wide variety of saltwater fish entrees. Viewers will learn 10 recipe/preparations in all, including broiled flounder, salmon cutlets with gremolata, pompano baked in parchment, swordfish steak martini (if you're looking for a new alternative band name, that's certainly no worse than Squirrel Nut Zipper), and grilled tuna with gazpacho sauce. The video's only real drawback is that recipes are not presented onscreen (though Cihelka explains pretty well what he's doing) but in recipe cards bundled in with the videos. Libraries will have to weigh the accessory factor here since the cards are mentioned on the tape. Recommended, with reservations. Aud: P. (R. Pitman)
